When Bill Collison, 54, rebuilt his Sussex greengrocers after flood damage in 2000, he added a cafe, which grew into a restaurant. A second restaurant followed and the chain now has more than 70 sites across the UK. The business was bought by Côte Restaurants in 2008, which demerged it four years later. Now majority-owned by the retail and restaurant entrepreneur Richard Caring, 68, Bill’s also sells its own brand of products through an online shop. Mark Fox, 47, the former managing director of Starbucks UK, joined last May as chief executive. Sales reached £110.5m in 2016.
