Hotel du Vin founder Robin Hutson, 59, launched this business in 2011 when he opened The Pig, a shabby chic, country-house hotel in the New Forest. There are now five Pig properties in southern England, with plans for further openings. The hotels, mostly in period buildings in rural locations, are known for their informal luxury and home-grown seasonal food. Sales reached £14.2m in 2015, boosted by the popularity of upmarket staycations. The group is backed by Jim Ratcliffe, 64, the founder of chemicals giant Ineos, who owns a 50% stake.
