Brothers Thom, 34, and James Elliot, 31, set up this pizzeria business after touring Italy to learn the art of pizza making. They started in 2012 with a stall in Berwick Street Market and opened their first restaurant a year later after raising £250,000 from friends, family, angel investors, and their own funds. Pizza Pilgrims now serves Neapolitan pizza and homemade limoncello from seven restaurants in London, and one in Oxford, which launched in October. Sales have doubled in two years to £6m in 2017, with £9.4m forecast for next year, when it plans to open a pizzeria in London Bridge.
