When Bill Collison’s Sussex greengrocers was wrecked by a flood in 2000, he was forced to start again, this time adding a cafe, which grew into a restaurant. The business was bought by Côte Restaurants in 2008, which demerged it four years later. Now majority-owned by the retail and restaurant entrepreneur Richard Caring, 69, Bill’s has 80 restaurants in the UK and an online shop. In 2016, Mark Fox, 48, joined as chief executive, and sales rose 23% to £110.5m, boosted by nine new restaurants opening in the financial year.
