When Bill Collison’s Sussex greengrocer shop was destroyed by a flood in 2000, he was forced to start again, this time adding a café, which grew into a restaurant. The business was acquired by Côte Restaurants in 2008, which demerged it four years later. Now majority-owned by retail and restaurant entrepreneur Richard Caring, Bill’s has more than 70 UK restaurants and an online shop selling own-brand products made from locally sourced ingredients. New store openings lifted sales to an annualised £90m in 2015. Collison, 53, is still involved in the firm, alongside joint managing directors Roberto Moretti, 49, and Scott MacDonald, 39.
