Adam Marshall and Adam Saword’s 12 London establishments combine elements of a diner, pub and nightclub, with an emphasis on vintage décor and an atmosphere that appeals to both sexes. Bar staff are trained in the art of cocktail mixology and menus are updated several times a year to keep things fresh. Sales have grown 61% a year, from £1.8m in 2008 to £7.5m in 2011, and the two founders aim to open 30 more venues in London over the next three years, then consider expansion beyond the M25.
