Staking her savings on a belief that there would be an appetite for healthy, home-style Indian cooking, founder Nisha Katona, 47, opened the first Mowgli restaurant in Liverpool in 2014. Initially unable to give up her career as a barrister, she spent days in court and evenings waitressing, cooking or developing recipes. Demand for Mowgli’s cuisine led to a site opening in Manchester in 2015, followed by a second base in Liverpool and one in Birmingham. Last year the chain secured £3.5m from the private equity firm Foresight, which has enabled it to open in Oxford and Nottingham. Sales hit £8.1m in the year to July, while Katona has published a cookbook and fronted the BBC2 series Recipes that Made Me.
