Pho is the national dish of Vietnam and the heart and soul of this London-based restaurant chain. With no previous restaurant experience, Juliette and Stephen Wall were so inspired by their travels that they remortgaged their home and put all their energies into launching their first street-food café in 2005. The couple have kept the menu simple, focusing on authentic Vietnamese dishes, including 15 varieties of pho, or noodle soup. Sales have risen 133% a year, from £427,000 in 2008 to £5.4m in 2011. The company now operates six sites, five in London and one in Brighton. The latest opened in September and overlooks the Olympic Stadium.
