Pho is the national dish of Vietnam and was the inspiration for this London restaurant chain. Founders Juliette and Stephen Wall, 41 and 42 respectively, were so taken with it during their travels that they remortgaged their home and started their first street-food café in 2005, despite having no restaurant experience. The company now operates six sites, five in London and one in Brighton. In July, Pho secured a £5.2m investment from Isis Equity Partners to fund expansion, first in London and then in other cities.
