Using only preservative-free ingredients to make fresh sandwiches, salads and soups each day has proved a successful format for this London-based high street chain. Started in 1986, it now has 385 shops worldwide, and last year opened a store in Shanghai, its first in China. Led by chief executive Clive Schlee, 56, the company is also trialling evening dining at one of its central London stores. Its majority owner, Bridgepoint, is reported to be considering a stock market float next year.
