Kelly Choi, 51, founded the business in Paris in 2010 with her husband, Jérôme Castaing, 51, supported by her mentor and master of sushi, Yamamoto-San. Now with headquarters in London, the business has kiosks in shops, supermarkets and airports in 10 European countries. Sales hit £317.9m last year, of which 87% were overseas.
