Kelly Choi, 51, founded the business in Paris in 2010 with her husband Jérôme Castaing, 52, supported by her mentor and master of sushi, Kunio Yamamoto. Now headquartered in London, the business operates kiosks in shops, supermarkets and airports across 10 European countries.
