Kelly Choi, 50, founded the business in Paris in 2010 with her husband Jérôme Castaing, 50, supported by her mentor, master of sushi, Yamamoto-San. Now headquartered in London, the business has kiosks in shops, supermarkets and airports across 10 European countries. Expansion into Sweden and Portugal helped sales hit £268.1m in 2017.
