Fish roe temaki, seafood chirashi and Californian rolls are among the 100 different recipes prepared every day by workers at Sushi Daily’s more than 700 kiosks across Europe. Kelly Choi, 50, founded the business in Paris in 2010 with her husband Jérôme Castaing, 50, supported by her mentor, master of sushi, Yamamoto-San. Now headquartered in London, the business has kiosks in shops, supermarkets and airports across 10 European countries. Expansion into Sweden and Portugal helped sales hit £268.1m in 2017.
