In 2015, Adam Jones, 34, and his brother Drew, 29, gave up careers in law and events management to set up a restaurant in Manchester’s financial district, serving classical Chinese dishes with a modern flavour. Their plan was to create a place for customers to celebrate events such as birthdays, anniversaries and promotions. With the first restaurant a success, the company opened a second, in Leeds in 2017, and sales from the two sites reached £8.7m in 2018. This year it opened in Birmingham in February and in Edinburgh in October, with a London launch planned for next year.
