This distinctive cocktail bar and restaurant chain has built its reputation on its “theatrical serve”, presenting award-winning food and cocktails with flamboyance. It was founded in 2009 when Jeremy Roberts, 57, and the late Tim Bacon opened its flagship venue in Manchester. It now has 18 branches across the country — the most recent opening was in Canary Wharf in London’s Docklands last month, with plans to open one more in London by Easter, bringing its total in the capital to five. In the year to March, sales were at £41m, and are forecast to hit £50m next year.
